Gold to silver gelatin conversion

The conversion from sheet gelatin to powdered is good to know. I always buy some sheet gelatin on trips to Europe. Last time we went to the cash and carry which is a local wholesale place (my inlaws have a small hotel) and bought a big box of sheets. Works well for making mousses. You can successfully substitute sheet gelatin for powdered gelatin in any recipe by using the following scaling. 1 (0.25 oz.) envelope granulated gelatin = 1 tablespoon [(15 ml)] powdered gelatin = 3 sheets leaf gelatin. and so one sheet of leaf gelatin would correspond to ~1 teaspoon (5 ml) of powdered gelatin.

The thickness of the gelatine sheets (amount of gelatine in each sheet) is slightly different for Gold, Silver and Bronze. Keep in mind, however, that if you are working with very delicate flavors (or do not want to dilute your recipe's taste) we recommend you use Gold sheets, as there is less - but stronger - gelatine in each sheet.
